Nate’s Triple F Champagne Highball

This cocktail will satisfy not only your traditional Champagne connoisseur who wants something special, but also your more experienced drinker who enjoys a more 'fortified' experience.

3 oz. Champagne

1 oz. Domaine de Canton ginger liqueur

1 oz. French vodka such as Ciroc or Grey Goose

½ oz. crème de cassis

Fill highball glass with ice.

Add all ingredients to a mixing tin. 

Gently pour into the highball glass.

Garnish with a  blackberry. Serve.

The “F” refers to the three French ingredients.

Chef Nate’s Spicy Sesame Noodles

2 tbls vegetable oil

4 cups cooked udon noodles or spaghetti noodles

1 c. beef broth mixed with 1 tbls corn starch

1 cup fresh shitake mushrooms

4 tbls stir-fry or hoisin sauce

2 tbls hot sesame oil or chili oil

1 cup chopped onion

4 cloves garlic, minced or thinly sliced

1/4 cup soy sauce

2 tbls rice vinegar

2 tbls light brown sugar

3 tbls sraracha chili sauce

½ c. julienned carrot strips, raw

4 tbls fresh chopped basil

¼ c chives, chopped in 2-inch pieces

1 tbls minced fresh ginger

3 tbsp Toasted sesame seeds for garnish

Heat the vegetable oil in a medium-high hot wok and sauté the chopped onion until softened, about 5 minutes.  Stir in the garlic, mushrooms, brown sugar, stir-fry sauce and sesame oil for 2 minutes. Add the beef broth mixture and carrots and stir until well blended.  Let broth come to a boil, then stir in cooked noodles, vinegar, chili sauce and fresh basil.  Stir until slightly thickened.

Serve in a bowl.  Top with a generous sprinkling of toasted sesame seeds and chives.

Serves 4-6.

7 Layer Salad

A favorite of the Hill family, this summer-inspired creation contains everything to make a crowd-pleasing (and decadent) salad!

The 7 ingredients:

1.      1 head Iceberg lettuce, torn for salad

2.      1 pkg. frozen peas, thawed

3.      1 lb. crispy chopped bacon

4.      ½ head fresh cauliflower, chopped

5.      1 c. Sugar

6.      2 c. Hellmann’s real mayonnaise

7.      2 c. Parmesan cheese

Assemble the ingredients in layers in a large salad bowl as listed.

Let chill in the refrigerator at least 2 hours or overnight.

Right before serving, toss the ingredients thoroughly.

Serve!
